Grind the lamb and fat through a 1/4" die.
Add the remaining ingredients to the meat.
Fry a test patty and adjust seasonings.
Stuff into casings forming 5-6" links.
Poach sausages over medium low heat to internal temp of 155 degrees.
Grill to fry sausages to desired color and flavor.
Freezes well.
