Layered Mexican Casserole
1. Heat a large skillet over medium heat. Add coconut oil and saute corn, garlic, pepper and onion until tender.
2. Preheat oven to 350
3. Add the remaining ingredients through salt to skillet; simmer for 15 minutes
4. Spoon a small amount of skillet mixture into the bottom of a 13x9 inch baking dish. Cover with a layer of tortillas. Continue alternating layers of tortillas, making the final layer with remaining vegetable mixture.
5. Cover with foil and bake for 25 minutes. Sprinkle with cilantro and chopped green onions
