Great soup/stew for the winter - low in calories and fat - and kids love it too
Dump all ingredients into large pan or slow cooker stir and heat. Amount of V-8 or Vegetable Juice can be altered to desired thickness of soup/stew. Add extra beans, corn or chicken to make as thick or soupy as you wish. This also tasted pretty good with browned ground beef instead of chicken as more of a taco soup/stew.
