Heat the oil in a large pan over a medium-high heat, adding the chicken and seasoning with salt and pepper.
Cook the chicken for about 6 minutes until it is golden, stirring occasionally
Cook the spaghetti until al dente
Add the onion and peppers to the chicken and cook for another 6 minutes
Add the spices and stir until coated
Stir in the tomatoes, stock, and single cream and simmer until slightly reduced, about 3 minutes
Add the spaghetti and toss until coated, then remove from the heat and stir in the cheddar until melted
Season with salt and pepper
