Delicious, authentic dish
In large, oven proof skillet, brown rice in oil. Be sure not to burn!
In the meantime, in separate bowl, squish tomatoes and add remaining ingredients. Mix well. Taste and add seasonings as desired (do not add salt).
Heat oven to 350 degrees.
Add veggie mix to rice in skillet and bring to boil. Simmer until rice sits on top of liquid.
Cover skillet TIGHTLY, using foil AND lid.
Bake for 30 minutes.
Freezes well.
