1. Preheat oven to 350F. In a large bowl, mix together corn, mayo, chipotle pepper, salt and pepper, and green onion until combined.
2. Spoon into casserole dish, sprinkle with parmesan cheese.
3. Bake covered for 20 minutes and then uncovered for another 20 minutes.
