In a blender, combine yogurt, avocado, onion, parsley, garlic, pepper and lime juice and blend until smooth. Portion out 4 servings of salad and top each with dressing.
Notes: This fresh-tasting and light salad combines mixed greens with julienned zucchini—and the creamy but tangy avocado-lime dressing tops it off to perfection. Look for such varieties as arugula, baby lettuce, mustard greens and spinach to create your mixed greens blend. To julienne the zucchini, use a sharp knife or mandoline.
