Put the olive oil in a large pot and briefly saute the garlic. Add the tomato paste and diced tomatoes. Stir and bring to the boil.
Add the sugar, onion and bay leaves, reduce to a low heat and simmer for 30 mins until reduced by about half.
Remove the onion halves and bay leaves and season with salt and pepper.
Finely chop the basil and oregano.
The sauce should have a creamy consistency. If it is too runny it will soak through the dough. If it is too thick it can burn in the oven
