Combine all fruit except the bananas in a large bowl. In a small bowl, mix the mint, sugar and lime juice. While mixing crush the mint with the back of a spoon to extract flavor. Pour dressing over the fruit and place in the refrigerator for at least an hour. Before serving slice and add bananas them toss to coat all the fruit with the dressing.
