Mom's delicious homemade whole wheat bread. Makes 5 loaves or about 50 rolls. Is also delicious when filled with cinnamon sugar, nuts, and dried fruit.

1. Combine water, 7 cups of flour by hand or in mixer. This is a good time to activate the yeast.
2. Add salt, honey, oil to mixture and mix.
3. Add the activated yeast and mix.
4. Add the additional 5 or 6 cups of flour one cup at a time. If using mixer switch to break hook. Stop when forms a ball structure.
5. Kneed approximately 6 minutes in mixer or 10 minutes by hand until is kind of elastic but not firm. You want it tacky but not sticky.
6. Use olive oil or Crisco to grease the bowl that you used for mixing, plop the ball of dough into the bowl for a bulk rise. Roll the ball around the bowl to cover all sides with oil. Cover with plastic wrap and let rise for approximately 90 minutes or until doubles in size.
7. When risen to double size, punch down the dough and shape. If filling do so at this step. Place into greased pans.
8. Allow to rise for another 90 or so minutes or until fills the pans.
9. Preheat oven to 350 degrees and bake for 45 minutes.
10. After removing bread from oven allow to cool for a few minutes before turning out onto cooling rack. Brush tops with butter.
