Mom's easy dahl adapted for the Instant Pot

Instant Pot: ( I did this in my 6qt Duo v3)
Set to saute (medium/normal). Once hot add ghee/oil and chopped onion. Saute until onions are translucent or lightly browned depending on your time and preference.
Add garlic and spices. Cook stirring and scraping the bottom until fragrant but before burning anything ~2 mins. Turn off saute mode.
Add lentils, water and some salt and stir. Secure lid and set to **sealing**. Set to high pressure for 10 mins. Allow natural pressure release (took me ~11 mins).
Once pressure has released open lid and stir in coconut milk and add butter. Salt and pepper to taste.
Looks a bit watery at first but thickens up after a couple mins. Left instant pot on keep warm. Can always adjust amount of coconut milk to reach desired consistency or simmer a bit on saute mode.
Forgot to add garlic! It tasted like it was missing something added some garlic powder it worked pretty well.
ToTry: Other spices + ginger, Curry leaves, curry powders, Sub chopped fresh chilies for the chili flakes.
ToTry: subbing yogurt for coconut milk .
ToTry: Adding 1 cup sweet or regular potato peeled and finely diced Make this more of meal than a side. (Add at spice frying step)
ToTry: sub broth for water.
ToTry: Doubling the ingredients plenty of room in the instant pot.
ToTry: Sub granulated or dried onion flakes for a 100% pantry only version.
