Excellent summer salad
1. Combine water turmeric , coriander, cumin and 1 teaspoon salt. Bring to a boil
2. Place couscous in large bowl. Once spice mix has boiled, pour it over the couscous then mix together with a fork. Cover the bowl with plastic wrap and let stand 15 min. or til liquid absorbed.
3. Use hands to break up and fluff the couscous breaking any clumps. Zest and juice the lemons and add both to the couscous. Drizzle the olive oil, then use a fork to mix well
4. Add zucchini skin, peppers, onion, currants and parsley. Season with salt. Cover and refrain. sev. hours to let flavors blend. Serve at room temp
