Sauté mushrooms, shallots in olive oil until tender. Add parsley, chicken stock, salt, pepper and mix. Place half the sweet potatoes, add half the mushrooms, followed by half the cheese. Continue to layer. Cover and bake at 220 degrees for 30 minutes. Uncover and bake for 20 minutes.
