On 4- 12 in skewers alternately thread steak, mushrooms, and squash. Place skewers on a rack of broiler pan, lightly brush with oil. Season with salt and pepper. Broil 4 to 5 inches from heat until meat is medium-rare, about 10 minutes, turning and brushing occasionally with oil. Meanwhile, in a small bowl combine peanut butter, 1/4 cup water, soy sauce, vinegar, cumin, and red pepper- serve with skewers. Garnish skewers with cherry tomatoes if desired.
