Clean the mushrooms: Use a damp paper towel or soft mushroom brush to wipe the mushrooms and remove any dirt. You can lightly rinse mushrooms with cool water and pat dry with paper towels, but do not soak them. Mushrooms absorb water and won't brown well when cooked if full of water. Remove the stems and finely chop using a vegetable cutting board.
Spray a medium saute pan with cooking spray. Preheat the pan over medium high heat. Add 1 tbsp. oil. When hot, add the finely chopped mushrooms and cook 5 to 7 minutes, until golden brown. Remove from heat and cool 5 minutes.
Place the meat in a medium bowl. (wash hands!) Add the deiced cooked mushrooms, soy sauce, onion powder, salt, and pepper to the bowl. Mix with hands or with a wooden spoon. Once thoroughly mixed form into 4 burger patties.
Heat remaining oil in the pan and add patties. (wash hands!) Cook 5 minutes on each side. Insert cooking thermometer into the side of each burger, with the tip extending into the center, and continue cooking to an internal temperature of 165 degrees.
