Suggest a better descriptionfryer. Fry only a few at a time so as not to overcrowd and bring down the temperature of the oil too much.
Fry until fish floats and is golden brown, about 4 to 6 minutes per batch, depending on size.
Drain on a rack over several layers of paper towels before transferring to a platter or individual plates.
Serve with baked beans, coleslaw, hushpuppies and cocktail or tartar sauce.
Notes
I have used this dredge for a wide variety of fish including catfish, white and speckled trout, mullet, tilapia, crappie, flounder fillets and others. I'm using both Creole and yellow mustard, but you can certainly use all yellow mustard. Substitute a good all-purpose seasoning like Lawry's if you don't have all of these seasonings. You may use this recipe on fried pork chops and chicken as well, just omit the Old Bay.
