This is a traditional Thai dipping sauce used as an accompaniment.for many dishes and appetizers.
Using a pestle and mortar or a small blender, pound or blend the chilies into a rough paste.
In a small saucepan, boil the vinegar, sugar and salt over a high heat to boiling point, stirring constantly. Reduce the heat to medium and simmer for 15 to 20 minutes until the mixture forms a thick syrup. Spoon the paste into the syrup, cook for 1 to 2 minutes, then pour into a bowl – ready for serving
Asian hot chilies are the best for traditioinal Thai flavor, however if they are too hot for you, can tone it down by using green Asian chilies. In a pinch, can use Sirachi sauce instead of the chilies.
