Melt butter in a saucepan over medium-high heat.
Whisk in flour and cayenne pepper and cook 1 to 2 minutes.
Whisk in milk and bring to a simmer.
Reduce the heat to low and add in cheese.
Stir until cheese is melted.
Will become grainy if heated too high...just do at a simmer
