Sometimes getting the perfect pancake can be tough, but have you ever tried making them in the oven? Our three-flavor pancakes bake up fast and delicious every time, and make for a tasty way to have some fun in the kitchen! Try making different designs and patterns with the whole family, then feast on your fluffy and flavorful results!
1. Preheat the oven to 425 degrees F. Grease and line a large baking pan with parchment paper. For this recipe we used a 17"x13" pan.**
2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
3. In a separate bowl, whisk buttermilk, butter, eggs, and vanilla.
4. Combine the wet and dry ingredients and stir to mix until just combined and no lumps of dry ingredients are visible. Split the batter between three bowls.
5. Stir in strawberry powder in the first bowl. Stir in the cocoa powder into the second bowl. And, stir the bananas into the third bowl.
6. Place each batter into a separate piping bag (or a Ziploc bag). Use the bags to pipe the batter into the pan – start with the strawberry, followed by the banana, and then the chocolate batter. You can opt for any design here, but we like to pipe into the pan diagonally.
7. Bake for 15-17 minutes, or until golden brown.
8. Cut into individual slices and serve warm with fresh fruit, chocolate chips, and syrup.
*Strawberry powder is simply made from freeze-dried strawberries. If you can’t find in your local store, you can opt for freeze-dried strawberries and create your own powder using a mortar and pestle or spice grinder
**When using a smaller baking pan, reduce the amount of batter so that it fills roughly 1/2-inch up the sides.
