Classic French
In a pan bring to the boil the milk, cream and the vanilla.
Mix by hand the egg yolks and sugar till pale and light.
Pour the milk into the eggs.
pour into the moulds.
100'C for 55mins
Moulds should be in a Bay Marie. , water 3/4 up the moulds.
They should have a slight wobble when taken out.
Take out of the bay Marie and let them cool.
Sprinkle over white sugar and gently caramelize before you serve with a blow torch.
