In the morning

As cakes are cooking you can peel the potatoes for starter and main.
The potatoes for starter keep whole and cook then drain and chill.
The potatoes for the evening cut into quarters and keep in pan of salted water until later.
In the evening
5pm -6pm
Cut and cook onions and chorizo for starters.
Also cook leeks if needed for veggie parcels.
Prepare the pork fillets as per recipe.
Chill white wine, keep red wine in kitchen
Cut bread and butter for table.
6pm
Start boiling potatoes.
Also put pan of water on hob ready for greens.
Cut green vegetables.
6.30pm
Mash potatoes as per recipe.
Lay table
Heat up other half of gravy from yesterday.
6.45pm
Put pork in the oven
Micro the sliced potato for starter
Reheat onion and chorizo
Plate starter as per recipe
7pm
Serve starters
7.05pm
Temp probe pork for 75 degrees
If ready take out and rest for with tin foil cover for 10 minutes.
Clear starters and cook green vegetables, drain and mix with lemon and butter.
Make sure mash potato is hot - if using hob keep stiring or it will stick. If not, use microwave.
Start to plate mains, with mash off centre and greens in a family service dish.
Cut pork in half at an angle and place on top of potato in accordance with photo.
While they are eating, portion the brownie and warm the chocolate sauce.
Start to plate brownies but do not add the ice cream and chocolate sauce until mains have been cleared.
Clear mains
Service dessert as per photo.
After dessert offer tea and coffee.
Get an early night for transfer day tomorrow!!
Tips Wrap up leftover cake for the guests transfer on a Saturday as a nice gesture.
