Sweet dumplings, great for a fall/winter dinner
Put corn syrup, butter, water and sugar in saucepan and bring to boil for 2-3 minutes until sugar is dissolved. While mixture is heating, prepare dumplings. Take refrigerated biscuits out, separate each biscuit in half and flatten slightly. Put sweet potato mixture in each round, fold in half and crimp edges. Place in baking dish with at least 2 inch sides. Pour sugar mixture into baking dish, then sprinkle with pumpkin pie spice (or others as desired). Bake in 350 degree oven for 45 minutes to one hour.
Alternative recipe for caramel sauce:
1 stick butter, 2 tablespoons corn syrup, 1 cup water, and 1 cup brown sugar. Prepare sauce as above and pour over dumplings, then bake.
Haven’t tried the caramel sauce yet but am adapting for the next time we have a gathering.
