Traditionally served on New Year's Day
Cut bacon in to small pieces, fry till crisp, in an iron skillet if possible. Reserve drippings.
In large bowl mix sauerkraut, applesauce, chicken stock, bacon, brown sugar, thyme, mustard and oregano. Place in a large glass baking dish, (large enough to hold chops in a single layer).
Season pork chops with salt and pepper to taste; brown the chops in batches, in bacon pan with some of the bacon drippings. Arrange pork chops on top of the kraut mixture.
Cover with foil and bake at 350 for an hour to hour an 15 minutes, until tender and juices run clear.
