Crumb Cake
Preheat oven to 350*. Topping: In medium bowl, combine flour,brown sugar and cinnamon. Pour melted butter over mixture and stir gently until large crumbs form.
CAKE: Brush 13" x 9" baking pan with 1 tsp. oil; dust with 1 tsp. four. In another medium bowl, combine remaining dry ingredients. In large bowl, whisk together wet ingredients. Fold dry ingredients into wet ingredients until just combned. Do not over mix. Spread batter into pan, then sprinkle evenly with crumbs.. Bake 25-40 minutes or until toothpick inserted into center comes out clean. Cool to room temperature. Before serving, sprinkle with confectioners sugar.
