Suggest a better description1)Heat 1 tbsp oil in a pan and gently fry the onion and garlic until soft. Add the flour, cumin, and ginger; stir and cook for another 2 minutes. Set aside
2) Meanwhile, heat 1 tbsp oil in a different pan. Saute the chicken for about 10 min, until lightly browned, then add the cashew nuts.
3) Heat the oven to 300 F. Put everything above in a deep casserole dish. Slowly pour the creamed coconut and the stock into the casserole, stirring constantly. Add the grated coconut, chicken, cashew nuts, cardamom, cinnamon, curry powder, and chili powder. Stir, cover, and cook in the oven for 30 min.
4) Start cooking the rice/ noodles.
5) Add the mango, stir thoroughly, and return to the oven for a further 30 min.
6) Serve with rice or noodles.
