crust:
toast almond flour on a frying pan real quick (optional), mix all dry ingredients together, mix in melted butter until even, then put on a non-stick surface to refrigerate/freeze for at least an hour (i used muffin tins). it's no-bake but if you wanted a more fun crust you could probably bake it a bit at this point.
filling:
mix cream cheese and coconut oil, then mix in powdered sugar alternative and then vanilla extract. add lime juice to taste if you want. if the cream cheese is a bit annoying to work with, just microwave it a bit. put on top of your chilled crust and pop it in the freezer til you get hungry.
top with whatever you want or nothing at all (i just tossed on some dark chocolate and coarse salt)!
