Whisk egg whites on low until frothy. Add cream of tartar and whisk on medium. Add sugar 1/3 at a time. Whisk to soft peaks. Add gel colouring. Whisk to stiff peaks. Pipe on the tray and tap the tray to pop air bubbles. Pierce any remaining air bubbles.
Bake 15min at 150C.
