Butter Loaf Cake - 8x3x3, 8x4x4, 6" round or x2 8" round/square
Oven - Lowest level (if use disposable aluminum pan, no greasing, no lining needed, place on baking sheet to bake)
1. Sift and mix cake flour, baking powder, salt and castor sugar in a mixing bowl.
2. Combine eggs, grape seeds oil, milk and vanilla extract (optional) together in another bowl.
3. Add butter to the dry ingredients, roughly mix. Then add half of the wet ingredients, mix at medium speed for 1 minute.
4. Next add the other half of the wet ingredients and mix at medium speed for 1 minute.
5. Bake in 8x3x3 or 8x4x4 loaf pan at 160C/320F for 50 minutes (CP 55-60 minutes). If top not brown enough, can turn up to 170C/338F to bake for a few minutes.
6. After it is baked, remove it from the mold right away. Cool completely. Wrap with cling film for 24 hours then eat:) If use disposable aluminum pan, let it cool completely in the pan then wrap with cling film for 24 hours together with the pan.
*Chocolate or Matcha butter Cake - Replace 15% flour with cocoa powder or matcha powder
*Marble Cake - Dissolve about 1/2 tablespoon or 1 1/2 teaspoon of cocoa powder with about 1 tablespoon of lukewarm water/milk (body temperature), cool then add to 1/3 of the batter. Or add cocoa powder directly to the 1/3 batter.
*Don't bother to make matcha with this recipe. Even CP Ka You.
