curry with rice
preheat oven 450 F
1 wash and dry sweet potatoes. cut in small pieces. add 1 tablespoon of olive oil and mix Season with salt and pepper to taste. Add to cooking sheet and cook for 16 - 18 min check frequently
2 Boil rice with one cup of water. once boiling reduce heat. Cover and cook 12-15 min until rice cooked
3 Drain and Rinse lentils, cut onions and mince garlic.
4 In large frying pan add 1 tbsp. olive oil. Heat and add onion. Cook 3-4 min then add curry paste, Curry spice blend and half garlic. Cook 30 sec mor4. Add lentils .75 cups hot water, half the crushed tomatoes and bring to boil. Once boiling reduce heat to medium and cook 5-6 min.
5 Stir in cream, roasted sweet potatoes and cook 1-2 min until thickened.
6 In small bowl add remaining garlic, 1tbsp. butter and season with salt and pepper.
7 Spread garlic over Naan Bread
8 Toast Naan bread 5-7 min over in oven
9 Serve curry over basmati rice with naan bread and dipping sauce.
