Decadent Nutella and dark chocolate cheesecake

1. Line a round approximately 20 cm springform pan with parchment paper.
2 . Process cookies and hazelnuts to fine crumbs in a food processor. If you are foregoing the hazelnuts, make sure to add the same amount of cookies to replace the hazelnuts. Gradually add melted butter and mix to combine.
3. Press cookie mixture evenly into the bottom of the springform pan; allow to set in the fridge while making the filling
4. Beat the cream cheese and sugar in a bowl until well combined.
5. Warm Nutella in the microwave and add it to the mixture, beat until well combined
6. Add the melted chocolate to the mixture, and beat until well combined
7. Pour the mixture into the pan, and smooth the surface if necessary. Refrigerate for 6 hours or overnight.
8. Make the ganache by heating the cream in a small saucepan on low - do not let boil. Add the chocolate and stir until smooth and well combined. Allow to cool to room temperature then pour over the top of the cheesecake.
