Ham with fruit and an egg
Cut any fat off the ham slices. Mix the butter, pepper and mustard and slather on both sides of the ham slices. Brown for about 3 minutes on each side. Remove from pan and keep warm.
Cover the apricots with the honey and lemon mixture. Pour in the pan and heat 1-2 minutes. Baste teh ham with this mixture.
Gently fry the eggs in the butter.
Place some apricots and sauce on each ham steak, and a cooked egg on top.
