A hot sauce recipe made with red chili peppers and cherry smoked sea salt.
1) Halve and remove stems and seeds from peppers.
2) Dice onion and carrot.
3) Mince garlic cloves..
4) Place above ingredients into 2 quart sauce pan. Add crushed tomatoes, cherry smoked sea salt, paprika, white pepper and sugar.
5) Add a solution of 15% water, 15% Yuengling lager beer, and 70% apple cider vinegar to sauce pan. We used 12 oz each of water and beer and 56 oz of apple cider vinegar. Add more or less of the solution to control amount of heat contained in the hot sauce.
Bring all ingredients to a boil and simmer for 40 minutes.
Transfer to a blender. Run on high until liquefied. Strain. Let cool and package.
Add more or less of the vinegar/beer/water solution to regulate the amount of heat in the hot sacue.
