Suggest a better description1 Put the sugar, milk and cocoa into a saucepan and stir over a low heat until sugar has dissolved. Do not boil at this stage.
2 Bring to the boil and then boil rapidly, stirring occasionally to prevent burning, until the temperature reaches 116°C on a sugar thermometer or the soft-ball stage.
The soft ball stage is when a small amount of the mixture dropped in cold water and rubbed betweenthe fingertips forms a soft ball under the water.
3 Remove from heat, stir in the butter and vanilla, then beat until the mixture loses its gloss and starts to become grainy.
4 Pour into a greased and paper-lined 20cm square cake tin. Mark into small squares. Cover and put aside until set. Break into squares to serve. Keep in an airtight container.
NOTE: this is OK with Milo.
