Suggest a better descriptionIn a large pot, bring salted water to the boil and cook the linguine. Drain and set aside.
In a jug or bowl, make the sauce with the brown sugar, soy sauce, siracha, and ginger. Whisk together and set aside.
In the pot from earlier, or in a wok, add 1tbsp oil then scramble the beaten eggs with the chilli flakes mixed through. Once cooked set aside with the pasta.
Return the pot/wok to the heat with another tbsp oil, then add the courgette, mushroom, and garlic. Sauté for 5-6 mins over a medium-high heat until cooked through.
Turn the heat down, then add the pasta, eggs, and sauce. Stir to coat everything with the sauce. Remove from the heat and scatter over the coriander, spring onion, and peanuts. Mix together and serve.
You can also add other veg such as broccoli or carrot to this to make it stretch further.
