Warm 1/4 cup of water in a large pot over low heat. Add the butter and whisk gently to melt it. Add the onions, salt and bouquet garni and stir to combine.
Place a parchment lit on top, pressing against the onions.
Cook slowly, stirring every 20-30 minutes. After about two hours the onions are done.
Discard bouquet garni and leave to cool in the juices.
Transfer the onions with the cooking liquid to a plastic container and refrigerate for up to a week.
Drain before using.
