Suggest a better descriptionPeel Onions, cut them into quarters and slice thin. Heat the butter and oil in a large saute pan over moderate low heat. Add the onions and cook, stirring occasionally, until they are golden brown and starting to caramelize, about 30 minutes. Season the onions with salt, pepper and nutmeg.
Preheat oven to 375. Place the onions in the bottom of the pie shell. In a bowl, beat together the eggs and cream and season with salt and pepper. Pour the mixture over the onions and bake on the middle rack of the oven until set and golden, 30-40 minutes. Let sit for 10 minutes then slice and serve.
