Simple beef roast made in the oven. Serve with potatoes on the side.
Preheat oven to 275 degrees F, while prepping the veggies.
Season both sides of the meat with the salt and pepper. In a large pan heat up the oil over medium-high heat. Brown both sides of the meat and place into a large baking dish (15 x 10).
Place the carrots, celery, and onion into the pan stirring in anything remaining from the meat for about 4 min. Add the butter and mushrooms and cook for about 5 min.
Pour vegetables into the baking dish with the meat and sprinkle the rosemary on top. Cover with foil and place into the oven for at least 2-1/2 hours, or until the roast is tender enough to easily come apart.
Serve over mashed potatoes or roasted potatoes on the side.
You can definitely add more spices such as thyme or mesquite before baking. Family loves it with mashed potatoes.
