A simple beef stew that is slowly braised in a the oven. Slow cooking without the slow cooker.
Preheat oven to 250 degrees.
Combine all ingredients in a dutch oven. Bake for 5 hours.
Recipe can be doubled or tripled.
Simplicity is the beauty of this recipe - simply combine and bake. The tapioca is the thickener for the liquid. The mixture will seem a bit dry since the only liquid added is the tomatoes - the beef and vegetables will give up plenty of liquid as it cooks.
