1. Remove Burrata from liquid and drain on paper towel.
2. Make pistau sauce. Seal in airtight container and refrigerate until ready to use.
3. Prepare balsamic glaze by reducing balsamic vinegar. Set aside.
4. Toast pepitas in a pan. Sprinkle lightly with salt when done.
5. Wash the peach, removing as much of the fuzz as possible. Remove the pit and slice the peach.
5. Lightly brush the peach slices and bread with olive oil so they won’t stick to the grill. Grill for a few minutes and flip, grilling the second side for a few minutes. Remove from grill and drizzle lightly with honey.
6. Drizzle glaze on one side of the serving plate. Place Burrata on glaze and spoon pistau over the Burrata.
7. Display the grilled peach slices on the other side of the plate.
8. Sprinkle the pepitas all over the plate.
9. Serve with grilled bread.
Pistau is a French sauce similar to pesto, but lighter in flavor.
