Grease 9 x 13 pan. Layer brioche cubes evenly in pan
Cook bacon in skillet over medium heat, 10 minutes, Remove from heat let cool about 5 minutes
Heat a small amount of the bacon fat in the same skillet over medium - high heat. Saute onion and pepper until soft. about 5 - 7 min
Meanwhile beat eggs, add milk, cheddar cheese, mustard powder, pepper and salt into the beaten eggs. Mix in bacon and onion-bell pepper and salt.
Pour the egg mixture over the bread cubes and give it a gentle stir to distribute. Gently press the cubes into the egg mixture so all the cubes are sitting in the liquid.
Cover and refrigerate for 8 hours overnight
Preheat oven to 350.
Bake in the preheated oven on the middle rack until set. the top is browned and a toothpick inserted into the enter of the casserole comes out clean. 45 - 55 minutes. Remove and allow to cool slighlty before serving.
