Pour meat drippings into a large measuring cup. Set cup in freezer for 5 minutes. Remove fat that has risen to the top, return rest of liquid to saucepan. Add enough beef, chicken, turkey or whatever broth to bring liquid to 3 cups (if necessary make broth with Better than Bullion). Bring to a boil. Strain, then add butter and flour. Add bits of meat if desired.
