You can certainly make your own Panang curry paste, a flavorful mild Thai curry, but it is commonly available at Asian grocery stores in a can or jar. You can add more chile pepper if you want an extra kick, but a little goes a long way, especially if you are using small chiles such as Thai birds. Any type of protein will work well for the filling--chicken, pork, beef, tofu, or seafood.
To make the filling, combine all the ingredients in a bowl and mic until well blended. Refrigerate for at least an hour.
To make the curry sauce, combine the curry paste, fish sauce, palm sugar, coconut milk, and coconut cream in a small saucepan. Bring the mixture to a simmer over medium heat. Whisk until well blended and the sugar has dissolved, about 5 minutes. Simmer for another 15 minutes, until it has reduced by one-third, then remove from heat and whisk in the lime juice and salt and pepper to taste.
Form each wonton, using 1 tablespoon of filling per wonton and folding in the style of your choice. Keep the wontons covered on a lightly floured tray. Wrap and refrigerate or freeze.
Preheat a few inches of oil to 340 degrees Fahrenheit in a heavy-bottomed pot. Add the wontons a few pieces at a time to the oil. Gently turn the wontons in the oil, cooking until all sides are golden brown, about 3 or 4 minutes. Drain the wontons on paper towels. Make sure the heat of the oil stays at 340 degrees Fahrenheit while frying the wontons, and return the oil to this temperature before adding new ones.
Serve the fried wontons in a pool of Panang curry sauce, sprinkled with chopped peanuts, fried shallots, and chopped cilantro and Thai basil for garnish.
Red Thai Curry sauce tastes just as good, if not better.
Panang curry flavors can be swapped out for red, yellow, or Massaman curry paste.
