My elder one has become a huge fan of mine,
as he loves Butter Naan served in Restaurants.
I made it for him today with Whole wheat flour and that too without a Tandoor.
His favorite Paneer Kofta too????
At the same time, my younger one is screaming at me... " Array Mumma, Aapnay Roti Kharab Kar Diya.....Mujhay achhi Roti bana do "

For Naan
The Naan can be made with and without yeast.
It can be made with Whole wheat flour and even with Maida.
I'll share the procedure which I opted for.
I used yeast and whole wheat flour.
In a bowl add 2 tsp sugar. Half cup warm milk.
Stir well.
Now sprinkle 1 tsp of dry active yeast. Stir well.
Cover tightly and keep in a warm place for 15-20 minutes. Now check if the yeast mixture has turned frothy or not. If yes, proceed further.
In a big bowl, mix 2 cups of whole wheat flour, salt as per taste and a tablespoon of butter. Mix it with the yeast mixture. Knead a soft dough using curd.
Apply some oil and cover it tightly with a cling wrap and keep it in a warm place for 1-2 hours to ferment.
Now divide the dough into four small portions.
That means you are going to make 4 Naan.
Heat the Tawa on gas top.
Don't apply any oil or ghee on Tawa.
Now roll the first Naan into an oval shape, neither too thick nor too thin.
While rolling sprinkle some kalonji on the top side and gently press them.
Flip the Naan and on this side apply some water with your fingers.
Put this wet side on the Tawa. Gently press from the edges.
This will make it stick to the Tawa.
You will soon see some bubbles appearing.
Don't remove the Naan.
Now flip the Tawa itself over the flame by slightly holding it above the flame for that kalonji part to get direct heat from the flame.
Expose all sides of this part of the Naan over the flame.
Once you see the kalonji part of the Naan getting golden brown. It's done.
Take it out of the Tawa the way you remove a Does and apply some butter and sprinkle some coriander leaves.
Serve hot.
For Paneer Kofta.
To make Koftas, crumble a cup of Paneer. For a smooth paste by first kneading the paneer.
Mix 2 small boiled potatoes, finely chopped green chillies, a tsp of ginger garlic paste, salt a little bit, a tablespoon of cornflour and little bit of besan to knead a soft dough. Keep it in fridge for half an hour.
Soak 7-8 Cashews in half cup of milk. Keep it aside.
Let's prepare the Gravy till then.
Heat a tablespoon of oil in a kadhai.
Saute two chopped onion and 2 tsp of ginger garlic paste. Cover and cook for faster cooking.
Add 2 chopped tomatoes.
Cook for another 2 minutes.
Let it cool down.
Grind this into a smooth paste along with the soaked Cashew Milk.
In the same kadhai, heat another tablespoon of oil.
Add cumin seeds, a small stick of cinnamon and 1-2 cloves.
Now add the onion tomatoes cashew paste.
Mix well and add a watery paste of red chilli powder, haldi powder, dhaniya powder and garam masala as per your taste.
Add some more water if you want a thinner consistency.
Add salt also at this point and let it cook till oil oozes out.
In the meantime, fry the Koftas in a separate vessel.
Make small balls of the Koftas and fry them in hot oil on low flame for even cooking. Drain them and keep it aside.
Coming back to the gravy.
Add some fresh well blended cream and Kasuri Methi to the gravy.
Add the fried Koftas and cook just for another 1 minute. Done.
Garnish if you wish with Dhaniya leaves.
Serve it with Garam garam Naan ????
