combine flour, salt and pepper on one plate. Put eggs in a bowl with a tbl water and mix. Combine breadcrumbs and parmesan in another plate. Dredge chicken in flour mix, then egg mix, then parmesan mix.
Heat one tbl butter and 1 tbl oil in pan and cook on medium low for about 3 minutes each side. Start over with rest of the chicken. Don't crowd the pan.
