Place the garlic cloves in a small saucepan and cover with cold water. Bring to a boil over high heat, and then remove the garlic and toss in a bowl of ice water. When cool, remove the garlic cloves and repeat this process, making sure to start with cold water in the saucepan.
Toss blanched garlic cloves and the fresh parsley into a blender, and pour in the olive oil. Process until everything is finely chopped. Season with a pinch of salt.
Serve with, for example, roast capsicum and grilled pork loin.
