I've tried this recipe several times for friends and it's always been a hit - even with those who don't love passionfruit.
1. Whisk egg, yolks and sugar in a medium bowl until pale and slightly thickened.
2. Heat cream in a medium pan, without boiling, until just hot. Gradually whisk hot cream into egg mixture; strain into a large jug. Stir in the passionfruit pulp.
3. Divide mixture evenly among six ovenproof dishes ( cup capacity). Place these into a larger baking dish; pour in enough boiling water to come halfway up sides of small dishes.
4. Cook in a moderate oven, 180C, for about 30 minutes, or until contents are just set. Remove dishes from water; cool.
5. Sprinkle brown sugar over tops of brulees; refrigerate for about 1 hour, or overnight.
6. Just before serving, cook brulees under a hot grill for about 2 minutes, or until sugar is melted and golden brown.
There are a number of steps to this recipe but the end result is worth it. Delicious!
