Suggest a better descriptionPreheat oven to 400 degrees
Sift flour, xantham gum and salt into a bowl and mix
Cut in butter until mixture forms crumbs
Add slightly beaten egg and mix
Gradually add 1-2 Tbsp come cold water a few drops at a time mixing after each addition
Keep adding water till you can form a ball
Transfer the dough to a floured surface and roll out the pastry until it is 1/4 of an inch thick and large enough to fill pan
Careful transfer pastry to pie pan
Trim edges and prick the base with a fork
Cook in oven until lightly browned
Cool and use with favourite filling
