From Paula Deen's Christmas 2008
1. In a small bowl, combine 1/2 cup warm milk, 1 teaspoon sugar, and yeast; let stand for 5 min.
2. In a large bowl, combine remaining 1 cup milk, remaining sugar, melted butter, chives, Dijon, egg, and salt; beat at low speed with an electric mixer until combined. Add yeast mixture, beating until combined. Gradually beat in flour to make a soft dough. Turn dough out onto a lightly floured surface; knead until smooth and elastic. Place dough in a large greased bowl, turning dough to grease top. Loosely cover and let rise in a warm place (85-degrees), free from drafts, for 1 hour, or until doubled in size.
3. Punch dough down; cover and let rest for 10 minutes.
4. Grease 24 muffin cups.
5. Shape dough into 1-inch balls. Place 3 balls into each muffin cup. Cover, and let rise in a warm place (85-degrees) free from drafts for 1 hour, or until doubled in size.
6. Preheat oven to 350-degrees.
7. Bake for 10 to 12 minutes, or until lightly browned.
HINT: Let dough rise in oven (that hasn't been used for several hours, at least). That way you can be sure it is in a warm dry place, away from drafts.
