Cook podded peas in boiling water to cover until tender-- approximately 1 hour. Drain water. Mash peas with a potato masher or blend in a blender or food processor. Add black pepper and sage to taste. Mix well. Add 1 - 2 TBSP flour. With your hands, make sausage-like patties or links, or make hamburger size patties. Spray a heated skillet with non-stick spray or use a TBSP of olive oil or vegetable oil. Fry over med. heat until browned on both sides. This low-fat recipe makes a great vegetarian replacement for hamburgers for lunch or sausages for breakfast.
