Cook until sugar dissolves, stirring constantly. Add peanuts and salt. Cook to hard-crack stage (300F), stirring occasionally. Add soda, butter, and vanilla; mix well. Pour onto prepared cookie sheets; while warm pull to desired thickness. When cool, crack into pieces.
